Football
Football is a numbers problem. Ten people for five a side, fourteen for seven. The person who organises it usually ends up sending forty messages, and the week they stop, the game stops with them.
Say how many players it needs, share one link and let people say yes on their own time. The moment enough are in, the match is on and everyone is told, including the ones who forgot they said yes.
Set the maximum to the size of the pitch. When it is full, the next person joins the queue and gets in the moment somebody frees their place, which happens every week.
The weekly slot is what turns a one off into a group. Tick every week and the next match opens by itself, so nobody has to be the organiser twice.
Fixed slots also fix the money. A pitch split ten ways is a few euros each, and everyone knows the amount before they say yes instead of after the final whistle.
Half the people who quit a weekly match quit because it was harder or softer than they expected. One honest line in the invitation, like friendly pace, mixed abilities, no slide tackles, keeps the right people coming and lets the wrong ones out politely.
Say what happens with the sides too. Picking teams at the pitch is fine when everybody knows everybody, and it is miserable for the new person. Two captains, or shirts and skins decided by who arrives first, is enough of a system.

More people, more substitutes, fewer cancellations. Set the minimum honestly or you will be four short at kickoff.
Needs 6 people
Two halves: the pub for the game, the pitch after. People can join either one.
How it works here
If too few people join, it quietly does not happen. Nobody shows up alone, and nobody has to cancel anything.
Set up a matchTwenty to choose from, or name your own. The form opens with it already picked.
Ten to play, twelve to be safe. Set the minimum at ten and the maximum at fourteen, so late dropouts do not kill the match.
Their place goes to the first person in the queue automatically, and everyone can see the number. Nobody has to send the message asking who is still coming.
